PILLAU RICE

Ingredients

3 cups basmati rice

4 bay leaves

4 cloves

1 tsp salt

4 cinnamon sticks

1 oz butter

1 pint water

tsp yellow food colouring

tsp red food colouring

4 green cardamons

 

Method

1. Add rice, water and all the other ingredients (except the food colouring) to a heavy based pan.

2. Bring to the boil and then simmer for 12 minutes until the water has been absorbed.

3. Add the food colouring in the form of a cross to the rice mixture. Place the pan in a pre-heated oven (max.) for 20 minutes. Fork the rice together to mix in the food colouring and fluff up the rice.
